LIMITED EDITION September/December 2017 developed in collaboration with Chef Rubio, who uses the kitchen as a means to talk about culture, and Scuola Professionale Galdus of Milan. A project based on fresh pasta, cultural integration and organisational socialisation at work: two ravioli from around the world, in a limited edition, with ironic and irreverent packaging, true to the style of Chef Rubio.
The suggested recipes:
- MEDITERRANEA with burnt wheat, tomatoes and salted ricotta
- ORIENTALE with prawns, pork and soy sauce
“Bringing a small cultural revolution to the table every day,” explains the chef, “through the universal recipe of pasta, which is capable of bringing together different populations in making it, whose roots are found in the Mediterranean area, Asia and the Far East. With Scoiattolo and Galdus, we want to put forward a good example of intercultural gastronomic integration, an authentic training test ground for aspiring chefs who are starting out in this profession at a time where dialogue between peoples is a moral obligation as well as an evolutionary requirement”.
