Time: 25 minutes
Ingredients (for 2 people):
- 1 packet of Scoiattolo cured ham tortellini
- 3 carrots
- 2 spoonfuls of fresh cream
- 1 small shallot
- 1 teaspoon of turmeric powder
- 1 pinch of curry powder (optional)
- Almond slivers
- Extra virgin olive oil
Method:
- Peel the carrots and chop them up into pieces, then put them in a saucepan with lots of water. Bring it to the boil and add a little salt. Cook them for a few minutes until they are soft. Drain them and keep a little cooking water to one side.
- Drizzle some extra virgin olive oil in a small pan and add the finely chopped shallot. Gently fry and add the carrots, fresh cream, turmeric and curry powder (if you want to add a touch of spice to the dish). Add a little cooking water and cook until the carrots are very soft and start to break up.
- Put everything in a mixer with the almond slivers, a little more extra virgin olive oil and blend until creamy.
- Cook the cured ham tortellini in plenty of boiling salted water for 5 minutes. Then, serve them with the velvety carrot sauce and decorate the dish with more almond slivers.
